What is retort food? A simple guide to ready-to-eat meals that last
Retort food is a fully cooked meal sealed in a flexible pouch and sterilised with heat, so it stays safe on a shelf for months without a fridge. You tear it open, heat it for a few minutes and eat. That is the whole idea.
How is retort food made?
- Cook: the dish is prepared the way a good kitchen would make it.
- Fill and seal: the hot food goes into a multi-layer pouch and is sealed airtight.
- Sterilise: the sealed pouch is cooked again under pressure and heat inside a machine called a retort.
- Cool and pack: the pouch is cooled, checked and boxed.
Because the food is sterilised after it is sealed, nothing needs to be added to keep it. That is why a properly made retort meal can be free of preservatives and additives.
Why do people choose it?
- No refrigeration: it sits at room temperature.
- Long shelf life: Eatery Malabarikas retort meals last up to 18 months.
- Ready in minutes: drop the pouch in hot water or empty it into a pan.
- Light and compact: a flat pouch is easier to carry and store than a tin or a tub.
- Consistent taste: every pouch is made to the same recipe.
Who uses retort food?
Ships and seaports, travellers and trekkers, students living away from home, families abroad who miss home cooking, hotels and caterers, and relief agencies. The next posts in this series cover each of these.
Why does quality matter?
The sterilising step must be exact. Eatery Malabarikas works to ISO 22000, HACCP Level 3 and US FDA standards, so every batch is controlled from kitchen to pouch.
